Zucchini Bread

Ingredients:

  • 3 cups Shredded Zucchini – about 4 medium
  • 3 cups Flour
  • 2 cups sugar
  • 1 ¼ cup vegetable oil
  • 4 eggs beaten
  • 1 TBSP + 1 tsp. Vanilla
  • 1 TBSP Cinnamon
  • 1 ½ tsp salt
  • 1 ½ tsp Baking soda
  • ½ tsp baking powder
  • 1 Cup chopped nuts -optional

Description

Preparation:

  1. Grease and flour 2 loaf pans or 6 mini pans.
  2. With the help of a spatula mix all ingredients during one minute or just until combined.
  3. Pour into pans.
  4. Bake until toothpick comes out clean. 50 minutes to 1 hour for large loaves, 30 to 35 minutes for mini loaves.
  5. Cool 10 minutes. Remove and cool completely.
