Delight in Tuna Melt Bites, a zesty fusion of tuna, purple onion, cilantro, parsley, lime zest, Peruvian pepper paste, and mayo. Piled on crackers, topped with sharp cheddar, each bite is a symphony of flavors.

Ingredients

  • 3 cans Tuna, previously drained (5 oz)

  • 1/4 cup diced purple onion

  • 2 Tbsp cilantro, chopped

  • 2 Tbsp parsley, chopped

  • 3 Tbsp mayonnaise

  • Zest of 2 limes

  • 2 tsp lime juice

  • 2 Tbsp yellow Peruvian pepper paste

  • Salt and pepper to taste

  • 30 crackers (I used Ritz or saltine)

  • 1 cup shredded Sharp Cheddar cheese

Directions

  • Preheat oven to broil.
  • In a large bowl combine tuna, onion, cilantro, parsley, mayo, lime juice and zest, yellow pepper paste, salt and pepper.
  • Scoop about 1 Tbsp of the tuna mixture onto each cracker and place the crackers on a baking sheet.
  • Top each stack of tuna with a sprinkle of cheese. Bake for 1 to 2 minutes, until cheese is melted and golden. Serve warm and enjoy!
