- Preheat oven to broil.
- In a large bowl combine tuna, onion, cilantro, parsley, mayo, lime juice and zest, yellow pepper paste, salt and pepper.
- Scoop about 1 tablespoon of the tuna mixture onto each cracker and place the crackers on a baking sheet.
- Top each stack of tuna with a sprinkle of cheese. Bake for 1 to 2 minutes, until cheese is melted and golden. Serve warm and enjoy!
