Tuna Melt Bites

Ingredients:

  • 3 (5 oz) cans of Tuna, previously drained.
  • 1/4 cup diced purple onion
  • 2 TBSP cilantro, chopped
  • 2 TBSP parsley, chopped
  • 3 TBSP mayonnaise
  • Zest of 2 limes
  • 2 tsp lime juice
  • 2 TBSP yellow Peruvian pepper paste
  • Salt and pepper to taste
  • 30 crackers (I used Ritz or saltine)
  • 1 cup shredded Sharp Cheddar cheese

Description

Preparation:

  1. Preheat oven to broil.
  2. In a large bowl combine tuna, onion, cilantro, parsley, mayo, lime juice and zest, yellow pepper paste, salt and pepper.
  3. Scoop about 1 tablespoon of the tuna mixture onto each cracker and place the crackers on a baking sheet.
  4. Top each stack of tuna with a sprinkle of cheese. Bake for 1 to 2 minutes, until cheese is melted and golden. Serve warm and enjoy!
