Homemade Mayonnaise

Yield: 2 cups



  • 2 large eggs
  • 1 1/2 teaspoons lime juice
  • 1 tsp. Dijon mustard
  • 1 tsp. salt
  • ¼ tsp finely ground pepper
  • 1 cup vegetable oil

  1. Place eggs in a blender, with salt, pepper, mustard, and lime juice. Blend everything very well.
  2. Once the ingredients are well integrated, add oil the oil little by little while the blender is still working.
  3. It is very important that you add the oil slowly. That’s the key to thickening the mayonnaise.
  4. Store in the refrigerator in a jar for up to 5 days.
