Crunchy Rice patties

Ingredients:

  • 2 1/2 cups cooked rice
  • 1 tbsp minced garlic
  • 4 tbsp all-purpose flour
  • 1/2 tsp baking powder
  • 2 eggs, beaten
  • 1 small diced yellow Peruvian pepper
  • 1/4 cup finely chopped fresh parsley
  • Salt/pepper
  • 1 cup vegetable oil

Description

Instructions:

1. Mix all ingredients in a bowl and season with salt and pepper.
2. Heat oil in a large skillet over medium-high heat, and place 1 full tablespoon of the rice mixture into the pan.
3. Flatten each patty with the back of a spoon and fry until golden/brown on both sides.
4. Remove from oil and drain on paper towels.
5. Serve warm with your favorite dipping sauces.
