Artichoke Quiche

Yield: 6 portions

Ingredients:

  • 1 – 9” frozen pie crust
  • 6 eggs
  • 1 cup whole milk
  • 1/4 cup grated parmesan cheese
  • ¼ cup grated provolone cheese
  • 1/8 tsp. Freshly ground nutmeg
  • ¼ tsp. Ground mustard
  • ¾ tsp. salt
  • ¼ tsp. freshly ground pepper
  • 1 15oz. Jar drained artichoke hearts
  • ¼ cup caramelized onions

Description

Preparation:

  1. Preheat oven 400F. Prick bottom and sides of crust with fork. Bake for 10 minutes. Let it cool.
  2. In a medium bowl, beat eggs lightly, milk, nutmeg, mustard, salt, and pepper with wire whisk until well blended.
  3. Incorporate caramelized onions, artichokes, and cheese.
  4. Pour over prebaked and cool pie crust.
  5. Bake for 10 minutes at 400F, and additional 25 to 30 minutes at 350F. Or until knife inserted in center comes out clean.
  6. Let it rest for 10 to 15 minutes before serving.
