Ingredients

  • 1 pound pork tenderloin

  • 1 Tbsp Dijon mustard

  • 2 Tbsp olive oil divided

  • 1 tsp soy sauce

  • 2 tsp fresh rosemary finely chopped

  • 2 tsp fresh parsley finely chopped

  • 1 tsp fresh thyme leaves

  • 2 tsp kosher salt

  • 1/2 tsp ground cumin

  • 1/4 tsp ground black pepper

Directions

  • Preheat oven to 400° F. Line a baking sheet with foil.
  • Combine Dijon mustard, 1 Tbsp olive oil, soy sauce, fresh herbs, salt, cumin, and pepper in a bowl.
  • Brush the mixture all over the pork.
  • Heat 1 Tbsp olive oil in a skillet over medium heat and brown pork, about 2 minutes per side.
  • Place pork on a baking sheet and roast uncovered for 18-20 minutes or until a thermometer reads between 140-142°F and remove the pork from the oven, because the internal temperature will rise to 145° F., and it will be perfectly tender and juicy.
  • Allow to rest for at least 5 minutes before slicing.
