Ingredients

  • 1 Lb. ground beef

  • 2 Tbsp oil

  • 1 cup small diced yellow onion

  • 1 bay leaf

  • 2 Tbsp garlic paste

  • 3 Tbsp tomato paste

  • 2 Tbsp Peruvian red pepper paste or Aji Panca

  • 1 -2 Tbsp oregano

  • 6 cups beef broth

  • 1/4 pound angel hair pasta or capellini

  • Salt and fresh ground pepper to taste

  • 1 cup whole milk, half and half, or evaporated milk.

  • 6 eggs

  • 1/4 cup fresh minced parsley

Directions

  • Place a pot over medium heat, add oil, and sauté the onions and bay leaf till the onions are slightly translucent, add the garlic and aji panca; cook for two minutes.
  • Add ground beef, and with the help of a wooden spoon break it and cook it for about 10 minutes.
  • Add oregano, tomato paste, and beef broth. Stir and let this simmer for 8-10 minutes.
  • Taste the soup and season it with salt and pepper as needed.
  • Add the pasta into the pot, mix, and cook almost al dente (read package instructions).
  • Add milk, half and half, or evaporated milk.
  • Serve immediately with a fried or poached egg on top, and garnish with parsley.
