Whisk 2 eggs, lime juice, Dijon mustard, salt, and pepper. Gradually add 1 cup vegetable oil while whisking until creamy. Enjoy homemade mayonnaise with a zesty kick!

Ingredients

  • 2 large eggs

  • 1 1/2 tsp. lime juice

  • 1 tsp. Dijon mustard

  • 1 tsp. salt

  • 1/4 tsp. finely ground pepper

  • 1 cup vegetable oil

Directions

  • Place eggs in a blender, with salt, pepper, mustard, and lime juice. Blend everything very well.
  • Once the ingredients are well integrated, add oil the oil little by little while the blender is still working.
  • You must add the oil slowly. That’s the key to thickening the mayonnaise.
  • Store in the refrigerator in a jar for up to 5 days.
