In a blender, combine ¾ cup blanched almonds, 2 tablespoons fresh lemon juice, ½ teaspoon Yellow or Dijon mustard, ½ teaspoon sea salt, and ¼ teaspoon ground black pepper. Add ¼ cup almond water and blend until smooth. Gradually drizzle in ½ cup extra virgin olive oil to achieve a creamy texture. Ingredients

  • 3/4 cup blanched almonds

  • 2 Tbsp fresh lemon juice

  • 1/2 tsp Yellow or Dijon mustard

  • 1/2 tsp sea salt

  • 1/4 tsp ground black pepper

  • 1/4 cup almond water

  • 1/2 cup extra virgin olive oil

Directions

  • Soak the almonds with water for at least 2 hours or overnight. Drain. Reserve almond water.
  • Place the almonds in a blender.
  • Add the rest of the ingredients – except the oil.
  • Turn on your blender and blend until it is as smooth as you can get it.
  • Slowly pour in the olive oil through the opening in the lid.

Notes

  • If you would like a thinner consistency, add more olive oil.
  • Verify saltines and tanginess at the end and add more to your taste if desire.
  • Refrigerate in a jar for up to a week.
