Ingredients

  • 2 eggs

  • 1 cup unsweetened almond milk or water

  • 1 cup raw fresh spinach leaves (a good handful)

  • 1 Tbsp. olive oil

  • 3/4 cup oat flour

  • 1/2 tsp. salt

  • 1/2 tsp. garlic paste

Directions

  • Add all your ingredients into a blender and blend until smooth.
  • Heat a skillet over medium heat and add butter or oil. Pour about 1/4 cup of batter into the pan. Swirl the pan around to form the batter into a flat, thin, even circle.
  • Cook for about 1 minute, gently flip, and cook the other side for 30 seconds to about one minute.
  • Remove from heat and set aside until ready to serve. Continue with the remaining batter.
