Homestyle Fried Rice - "Arroz Chaufa Casero" is a delectable dish featuring a symphony of flavors. Sautéed in a blend of vegetable oil and butter, it boasts eggs, green onions, garlic, ginger, protein/veggies, and cold rice. Finished with oyster sauce, low sodium soy sauce, sesame seeds, and sesame oil, it's a savory delight!

Ingredients:

  • 2 Tbsp vegetable oil, divided

  • 1 Tbsp butter

  • 6 large eggs

  • 1/2 cup green onions, thinly sliced (separate white from green part)

  • 1 Tbsp garlic paste or minced

  • 1 Tbsp fresh ginger, grated, paste, or finely chopped

  • 1 cup small – medium diced protein or vegetables (I used precooked sausages) *

  • 4 cups cold-cooked white rice

  • 3 Tbsp Oyster sauce

  • 1/8 cup low-sodium soy sauce

  • 1 Tbsp toasted sesame seeds

  • 1 Tbsp sesame oil

Directions

  • Heat a wok or skillet over medium heat, and when it´s hot, add half vegetable oil and butter. Beat your eggs in a bowl and make an Omelette. Medium dice it. Reserve.
  • Add the other half of the oil sauté the white part of the green onions and add ginger. Cook for 1 minute.
  • Add the sausage and sauté for one minute.
  • Incorporate the rice followed by the oyster sauce and soy sauce stir quickly.
  • Add the chopped scrambled eggs, sesame seeds, and the green onions.
  • Serve immediately.

Notes

  • You can make your “Chaufa” with any protein or vegetable such as shrimp, chicken, pork, Chinese sausage, snow peas, soy sprouts, mushrooms, peas, carrots, and bell peppers, to mention some options.
  • If your rice does not have garlic, sauté 1 Tbsp garlic paste or minced with the ginger and the white part of the green onions.
  • Be careful with the amount of soy sauce. Use half first and taste it. You can always add soy sauce at the table.
