Ingredients

  • 4 Tbsp unsalted butter

  • 1 Tbsp olive oil

  • 1/2 cup shallots finely chopped

  • 1 Lb small Cremini mushrooms

  • 2 Tbsp dry white or red wine

  • 1 tsp fresh thyme leaves chopped

  • 2 Tbsp chopped fresh parsley

  • 4 cloves garlic minced

  • Salt and pepper to taste

Directions

  • Heat the butter and oil in a large pan or skillet over medium-high heat.
  • Sauté the shallots until softened (about 3 minutes).
  • Add the mushrooms and cook for about 4-5 minutes until golden and crispy on the edges.
  • Pour in the wine and thyme and cook for 2 minutes, to reduce slightly.
  • Stir one Tbsp of parsley and garlic. Cook for a further 30 seconds, until fragrant.
  • Season generously with salt and pepper (to your taste).
  • Sprinkle with remaining parsley and serve warm.
