Ingredients

  • 3 cups Shredded Zucchini – about 4 medium Zucchinis

  • 3 cups Flour

  • 2 cups sugar

  • 1 1/4 cup vegetable oil

  • 4 eggs beaten

  • 1 Tbsp Vanilla

  • 1 tsp Vanilla

  • 1 Tbsp Cinnamon

  • 1 1/2 tsp salt

  • 1 1/2 tsp Baking soda

  • 1/2 tsp baking powder

  • 1 Cup chopped nuts -optional

Directions

  • Grease and flour 2 loaf pans or 6 mini pans.
  • With the help of a spatula mix all ingredients for one minute or just until combined.
  • Pour into pans.
  • Bake until the toothpick comes out clean. 50 minutes to 1 hour for large loaves, 30 to 35 minutes for mini loaves.
  • Cool for 10 minutes. Remove and cool completely.
