Ingredients

  • For The Crust:
  • 1 cup graham cracker crumbs

  • 1/4 cup sugar

  • 1/4 cup unsalted butter, melted

  • For The Filling:
  • 2 packages (8 ounces each) cream cheese, softened

  • 1 cup sugar

  • 1/4 cup freshly squeezed lemon or lime juice

  • 1 cup heavy whipping cream, whipped

  • 2 tsp grated lemon or lime zest

  • 1 can (11 ounces) tangerines, well-drained

Directions

  • For The Crust:
  • In a bowl or food processor combine graham cracker crumbs, sugar, and butter.
  • Press into the bottom and sides of a 9-in. pie dish.
  • Bake at 350° for 6-8 minutes or until lightly browned. Cool.
  • For The Filling:
  • For the filling, beat cream cheese and sugar in a bowl for about five minutes, or until light and fluffy.
  • Add lemon juice and beat well.
  • Fold in whipped cream and zest.
  • Arrange 3/4 of the tangerine segments over the pie crust.
  • Spread the filling evenly over the tangerines.
  • Decorate with the rest of the tangerine segments and some sprig of mint.
  • Refrigerate for at least 3 hours or overnight.
