Ingredients

  • 4 cups whole milk

  • 2 cinnamon sticks

  • 1 lemon, zest cut off in 1/2-inch-wide strip

  • 6 large eggs

  • 1/2 cup white granulated sugar

  • 1 tsp vanilla extract

  • 1/4 cup Pisco

Directions

  • Pour the milk into a saucepan along with the lemon strip, cinnamon sticks, and cloves.
  • Bring to a simmer over medium-high heat, then reduce heat to low, and cook for 5 minutes.
  • Turn off the heat and allow to cool down at room temperature.
  • In a separate bowl beat the eggs and sugar together until the sugar has dissolved.
  • Combine milk and egg mixture, and discard the lemon strip, cinnamon, and cloves.
  • Add vanilla and pisco and mix until well combined.
  • Pour the custard through a fine mesh sieve.
  • Bake over a water bath in a preheated oven at 380F for about 30 minutes.
  • The top should look dark brown.
  • Chill before serving.
