Ingredients:

  • 2 Tbsp melted butter

  • 1 cup sugar

  • 1 egg

  • 1 cup Buttermilk

  • 1 tsp Vanilla

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp Ground cardamom

  • 1/2 tsp ground cinnamon

  • 1/4 tsp salt

  • 2 cups flour

  • 1 15 oz. can of pears (well drained)

  • Topping:
  • 2 Tbsp melted butter

  • 1/2 cup white sugar

  • 1/4 tsp cardamom

  • 1/4 tsp cinnamon

Directions

  • Preheat oven to 350 F and butter and line with parchment paper a 9-inch diameter round cake pan.
  • In a large mixing bowl, whisk together melted butter, sugar, and egg. Once combined, add buttermilk and vanilla.
  • In a separate bowl combine flour, baking powder, baking soda, cardamom, cinnamon, and salt.
  • Add flour mixture to wet ingredients and whisk just until combined.
  • Pour the batter into the prepared pan.
  • Arrange pears in an even layer over the top of the cake and push gently into the batter.
  • Combine all topping ingredients and sprinkle evenly over the cake.
  • Bake for 50 minutes or until golden. Use a cake tester to ensure the cake is done.
  • Let it cool in the pan for about 30 minutes, then carefully transfer it to a wire rack to cool completely.
