Ingredients

  • 1 cup unsalted butter

  • 1 1/2 cup Brown Sugar

  • 2 large Eggs

  • 1 tsp Vanilla extract

  • 2 1/4 cup Flour

  • 1 1/2 cup quick oats

  • 1/2 tsp Cornstarch

  • 1 tsp Baking Soda

  • 1/2 tsp Salt

  • 2 cups Sweetened Dried Cranberries

Directions

  • Preheat oven to 365 F.
  • In a large mixing bowl, cream butter, cut into cubes, and brown sugar for 5 minutes or until light and fluffy. Scrape the sides of the bowl halfway through to ensure even mixing.
  • Add eggs, vanilla, and cream for 1 additional minute.
  • Stir in flour, oats, cornstarch, baking soda, and salt. Fold in dried cranberries.
  • Drop onto a baking sheet. Bake for 9-11 minutes or until the edges start to turn a light golden color. Don't overbake.
