Ingredients

  • 4 tbsp extra-virgin olive oil

  • 2 cloves garlic, minced

  • 4 large Roma tomatoes, small diced

  • 1/4 cup thinly sliced fresh basil

  • 1 tsp kosher salt or more to taste

  • 1/2 tsp freshly ground black pepper

  • For the Toast:
  • 1 large baguette sliced 1/4" thick on the bias

  • Extra-virgin olive oil, for brushing

  • 2 cloves garlic

Directions

  • In a large bowl, add tomatoes, basil, garlic, olive oil, salt, and pepper. And toss to combine.
  • Meanwhile, preheat oven to 400°F.
  • Brush slices of bread on both sides lightly with oil and place on a large baking sheet.
  • Toast bread until golden, 10 to 15 minutes, turning halfway through.
  • Let bread cool for 5 minutes, then rub the tops of the bread with halved garlic cloves.
  • Taste your tomato salad and add salt if needed.
  • Spoon tomatoes on top of bread just before

  • If you leave the salad for too long on top of the toast it will get soggy.
