Ingredients

  • 2 pounds potatoes, sliced into 1/2-inch-thick pieces

  • 1 yellow onion, halved and each half cut into quarters

  • 1/4 cup olive oil

  • 4 thinly sliced cloves of garlic

  • 1/4 cup chopped fresh parsley

  • 1 tsp freshly ground black pepper

  • 1 Tbsp salt

Directions

  • Preheat oven to 450 F
  • Combine potatoes, onion, garlic, pepper, and salt in a roasting pan with olive oil.
  • Bake for 10 minutes in a covered roasting pan with aluminum foil.
  • Remove foil and roast in the preheated oven for 25 minutes, or until potatoes and onion are browned and edges are crispy.
  • Take out of the oven, transfer to a serving dish, and toss with freshly chopped parsley.
