Ingredients

  • 3 Tbsp vegetable oil

  • 2 cups basmati or Jasmin rice

  • 2 tsp salt

  • 2 Tbsp minced or paste of garlic

  • 2 cups fresh or frozen kernels of choclo (Peruvian corn)

  • 2 1/2 cups water

Directions

  • In a large saucepan, with a fitted lid, heat oil, add rice, and salt. Stir the rice until you start seeing the change of color (deep white); add the garlic and choclo and sauté for about one minute.
  • Add the water and stir. As soon as it starts boiling, cover with the lid and simmer for 20 minutes. And do not feel tempted to open it!
  • After 20 minutes, do not open it yet! Turn off the stove and let it rest for about 10 to 15 minutes.
  • Then fluff it with a fork and enjoy!
