Ingredients:

  • Pork Pattie Ingredients:
  • 1 pound ground pork

  • 1/2 cup small diced red onion

  • 2 large eggs, lightly beaten

  • 1/2 tsp ground cumin

  • 1/2 tsp dried oregano

  • 1 tbsp Worcestershire sauce

  • 1/2 cup Parmesan cheese

  • 1 tsp kosher salt

  • 1/2 tsp freshly ground black pepper

  • Vegetable oil for cooking

  • Spinach Mashed Potatoes Ingredients:
  • 11/2 lb potatoes peeled, cut into quarters, Russet or Yukon Gold

  • 8 -10 oz fresh spinach

  • 1 cup whole milk

  • 6 Tbsp butter

  • 1 Tbsp minced fresh garlic

  • Pinch nutmeg

  • Salt and ground black pepper to taste

Directions

  • Pork Patties Preparation:
  • In a small pan sauté onion with one Tbsp of vegetable oil.
  • Using a fork, or your hands, combine, pork, sauté onion, eggs, cumin, oregano, Worcestershire, cheese, salt, and pepper in a large bowl.
  • Preheat a nonstick frying pan to medium-high, when hot add vegetable oil.
  • Working in batches, using a spoon drop gently a portion into the hot oil, spacing them so as not to crowd the pan.
  • With the back of a spoon form them into patties. Cook the patties, turning once, for 3 minutes per side, until golden brown.
  • Spinach Mashed Potatoes Preparation:
  • Boil the potatoes in salted water.
  • In the meantime, preheat a large saucepan, add three Tbsp of butter and garlic, sauté, and add Spinach with salt and pepper.
  • When the spinach is cooked blend it with half of a cup of milk and nutmeg. Reserve.
  • Drain the potatoes and mash until smooth.
  • Mix potatoes with spinach and the rest of the butter. Mash thoroughly until the mixture becomes fluffy.
  • Adjust milk, salt, and pepper, if necessary.
