Peruvian Fried Rice, or "Arroz Chaufa," is a delicious fusion of Chinese and Peruvian flavors. This popular dish features sautéed green onions, garlic, ginger, diced chicken, Chinese sausage, snow peas, and soy sprouts, all mixed with cold-cooked white rice and scrambled eggs. Seasoned with low-sodium soy sauce and sesame oil and garnished with green onions and sesame seeds, it perfectly embodies Peru's rich culinary heritage, offering a delightful blend of textures and flavors.

Ingredients

  • 2 Tbsp vegetable oil

  • 1/2 cup green onions, sliced (separate white from green part)

  • 1 Tbsp garlic paste or minced

  • 1 Tbsp fresh ginger, grated, paste, or finely chopped

  • 2 cups boneless/skinless chicken thighs diced into ½ inch cubes or chicken breast

  • 1/2 cup sliced Chinese sausage

  • 1 cup snow peas, thinly sliced

  • 1 cup soy sprouts

  • 4 cups Cold-cooked white rice

  • 4 eggs scrambled and then roughly chopped

  • 1/4 cup Low-sodium soy sauce

  • 2 Tbsp toasted sesame seeds

  • 3 Tbsp sesame oil

Directions

  • Heat a wok or skillet over high heat, and when it´s very hot, add vegetable oil.
  • Sauté the white part of the green onions, and add ginger and garlic. Cook for 1 to 2 minutes.
  • Add the chicken, carefully mix well, and cook for a couple minutes or until cooked through.
  • Add Chinese sausage and mix for one minute.
  • Add snow peas and soy sprouts. Incorporate the rice and stir quickly.
  • Mix well, then add the chopped scrambled eggs.
  • Season with soy sauce and 1 teaspoon sesame oil.
  • Turn off the heat and sprinkle with sesame seeds and green onions. Serve immediately.
