Ají de Gallina is a traditional Peruvian dish featuring tender shredded chicken simmered in chicken stock. The dish's signature flavors come from Peruvian yellow aji peppers and red aji pepper paste. Aromatic elements, such as garlic and diced onions, are sautéed in corn oil to create the base. The sauce is enriched with chopped walnuts, pecans, grated Parmesan cheese, and torn white wonder bread, which absorbs the flavors.

Ingredients

  • 1 1/2 pounds cooked chicken breast

  • 4 cups chicken stock

  • 1/3 cup corn oil (Mazola)

  • 3 Peruvian yellow aji peppers (Aji Amarillo)

  • 1 Tbsp Peruvian red aji pepper paste (Aji Colorado)

  • 2 Tbsp garlic, minced or paste

  • 1 large onion, small diced

  • 1 cup chopped walnuts

  • 1 cup chopped pecans

  • 3/4 cup grated parmesan cheese

  • 4 slices white wonder bread

  • 3/4 cup evaporated milk

  • 4 yellow potatoes

  • 2 hard-boiled eggs

  • 10 black olives, halved

Directions

  • Cook the yellow potatoes in salted water until tender when pierced with a fork. Let cool, peel, cut into 1-inch slices, and set aside.
  • Place the bread in a small bowl and pour the evaporated milk over it to soak. Set aside.
  • Strain broth and reserve 2 cups.
  • In a blender, process yellow peppers with the corn oil until smooth.
  • Sauté the onions until soft and golden. Incorporate the pepper paste (red and yellow) and the garlic to sauté for one minute. Remove from heat.
  • Shred the cooled chicken into bite-size pieces.
  • In a blender or food processor, process the evaporated milk and bread.
  • Over low temperature, incorporate the bread puree into the sautéed onions. Stir gently.
  • Incorporate 1 1/2 cups of chicken stock. Bring to a low simmer, and stir in the chicken. Add more chicken stock if the sauce is too thick.
  • 10. At the end, add the nuts and parmesan cheese.
  • 11. Verify salt.
  • 12. Serve with a side of white rice over yellow potatoes. Garnish with slices of hard-boiled egg and black olives.
