This Shrimp Fried Rice combines cold brown rice, cooked shrimp, and black quinoa with a blend of vegetable and sesame oils. Sautéed with garlic paste, fresh ginger, and eggs, it's seasoned with soy sauce, scallions, and toasted sesame seeds for a flavorful, hearty dish.

Ingredients

  • 2 cups cold cooked brown rice

  • 1 cup cooked shrimp

  • 1/2 cup cooked black quinoa

  • 2 Tbsp vegetable oil

  • 2 Tbsp sesame oil

  • 1 Tbsp garlic paste

  • 1/2 Tbsp fresh ginger, grated, paste or finely chopped

  • 1 Tbsp ginger

  • 2 eggs

  • 1/4 cup scallions, sliced

  • 3 Tbsp soy sauce

  • 2 Tbsp toasted sesame seeds

Directions

  • Heat a wok or pan over medium high heat, add vegetable oil.
  • Make a scramble egg and reserve.
  • Using the same sauce pan add oil, garlic, ginger, and shrimp, and stir quickly.
  • Combine with the rice, scrambled eggs and add soy sauce.
  • Season 1 tsp sesame oil. Turn off the heat and sprinkle with sesame seeds and the chopped scallions. Serve immediately.
