Delight in a Quick Apple Pie with a luscious Granny Smith apple filling, kissed with citrus and warm spices. Crowned with a golden streusel topping, this easy-to-make pie promises a symphony of flavors in every bite.

Ingredients

  • 1 (9 inch) frozen pie shell

  • Apple Filling:
  • 5 cups apples - peeled, cored, and sliced 1/4 inch (Granny Smith)

  • 1 Tbsp lime or lemon juice

  • 2 Tbsp all-purpose flour

  • 2/3 cup white sugar

  • 1/2 tsp ground cinnamon

  • 1/4 tsp ground nutmeg

  • 1/4 tsp ground allspice

  • 2 Tbsp unsalted butter

  • Streusel Topping:
  • 3/4 cup all-purpose flour

  • 1/2 tsp ground cinnamon

  • 1/2 cup packed brown sugar

  • 3/4 cup rolled oats

  • 1 tsp lemon zest

  • 1/2 cup butter

Directions

  • Preheat oven to 425F. Fit pastry shell into pie pan and place in freezer.
  • To Make Apple Filling:
  • Place apple slices and lemon or lime juice in a large bowl and toss.
  • In a separate bowl combine 2 Tbsp flour, white sugar, 1/2 tsp cinnamon, nutmeg, and allspice. Mix well, then add to apples. Toss until apples are evenly coated.
  • Divide your two Tbsp of butter into six or eight pieces.
  • Remove the pie shell from the freezer. Place the apple mixture in the pie shell and dot it with your pieces of butter.
  • Lay a sheet of aluminum foil lightly on top of the filling, but do not seal.
  • Bake in preheated oven for 15 minutes.
  • Streusel Topping:
  • In a medium bowl combine flour, cinnamon, brown sugar, oats, and lemon peel.
  • Cut in 1/2 cup butter into little pieces. With your hands mix butter with the other ingredients until it looks crumbly.
  • Remove the shell with apple filling from the oven and evenly distribute the streusel on top.
  • Reduce heat to 375F. Bake an additional 40 to 45 minutes, until the streusel is browned, and the apples are tender.
  • If the streusel starts getting too brown, cover loosely with aluminum foil.
  • Take it out of the oven and let it rest for a couple of hours (if possible…)
