Ingredients

  • 1/3 cup mayonnaise

  • Juice of 1/2 lemon

  • Zest of one lemon

  • 1/2 tsp. Chili flakes, Siracha, or any hot sauce, (optional)

  • 2 (6-oz.) cans tuna

  • 1/4 cup finely chopped green onion

  • 2 Tbsp freshly chopped parsley

  • Salt and Freshly ground black pepper to taste

  • 8 slices bread, such as sourdough

  • 8 slices cheddar cheese

Directions

  • Preheat the oven to 400° F.
  • Toast your bread in your toaster, or the oven.
  • In a large bowl, combine mayonnaise, lemon zest and juice, and red pepper flakes (if using).
  • Drain tuna then add to the mayonnaise mixture. Use a fork to break up tuna into flakes. Add onion, and parsley and toss to combine. Season with salt and pepper.
  • Top a side of bread with approximately 1/2 cup of tuna salad, and 2 slices of cheese. Repeat with remaining ingredients and place on a large baking sheet.
  • Bake until cheese is melty, 5 to 8 minutes.
  • Serve immediately and enjoy it warm.
