Ingredients

  • 1 cup cooked black quinoa

  • 2 large eggs, beaten

  • 1/2 tsp fine-grain sea salt

  • 1/2 tsp fresh black pepper

  • 1/3 cup finely chopped celery

  • 1/3 cup finely chopped leeks

  • 1 little shallot, finely chopped

  • 2 medium size Portobello mushrooms, finely chopped

  • 1/3 cup finely chopped tomato

  • 3 cloves garlic, finely chopped

  • 1/2 cup parmesan cheese

  • 1/2 cup panko or bread crumbs or oatmeal

  • 1 Tbsp extra-virgin olive oil

Directions

  • Step 1: Combine the quinoa, eggs, salt and pepper in a medium bowl. Stir in the shallots, garlic, tomato, celery, leeks, parmesan and mushrooms. Add the panko, stir, and let stand for a few minutes.
  • Step2: Heat corn oil in a large, heavy skillet over medium heat. Working in batches, add patties, and cook until bottoms are deeply browned, about 6 to 8 minutes. Flip patties with a spatula and cook the second sides until golden, about 7 minutes.
  • Step 3: Remove from skillet and cool on a wire rack. Repeat with remaining patties.
