Chancaca Syrup is a luscious syrup made by simmering 500 grams of chancaca with 4 cups of water, a stalk of cinnamon, 1 tbsp of cloves, 2 star anise, 1 sour apple (preferably Gravenstein), and 4 fig leaves. This aromatic blend creates a rich, spiced syrup perfect for drizzling over desserts.

Ingredients

  • 500 gms chancaca

  • 4 cups water

  • 1 stalk cinnamon

  • 1 tbsp cloves

  • 2 star anise

  • 1 sour apple (Gravensteins is my favorite)

  • 4 fig leaves

Directions

  • In a heavy bottom pot, bring to a boil all the ingredients. Once it’s in a full boiling, lower to medium temperature and boil for 30 minutes.
  • Strain and let cool.
  • Bottle it in a glass container.
  • Refrigerate up to a month.
