Crispy Fried Yucas: Indulge in golden perfection with frozen yucas seasoned in a blend of salt and black pepper, coated in rice starch, and deep-fried to crunchy delight in vegetable oil.

Ingredients

  • 1 lb. frozen yuccas

  • 3 Tbsp salt divided

  • 1/2 tsp. ground black pepper

  • 1 cup rice starch

  • 4 cups vegetable oil

Directions

  • In a large pot with water and two Tbsp of salt cook the yucas until they feel tender and soft.
  • Drain in a colander and let them cool for about 20 minutes.
  • Remove the veins and cut it into pieces 2x1’.
  • In a bowl or a bag mix the rice starch with one Tbsp salt and white pepper; add the pieces of yucas and shake it, baby!
  • Preheat oil, and fry yuccas in batches. When they look lightly golden brown, place them in a paper towel to drain the excess oil.
  • To finish, a little sprinkle of salt.
