Ingredients

  • 3 large eggs

  • 1 canned tuna, drained (5 oz.)

  • 3/4 cup red or yellow onion, small diced

  • 1/4 cup Anaheim pepper, small dices

  • 1/2 cup tomato, small diced

  • 1/4 cup fresh parsley, finely chopped

  • 1/4 cups flour (I use whole wheat)

  • 1/2 tsp garlic paste

  • 1 pinch ground black pepper

  • 1 tsp salt

  • 1/4 cup vegetable oil

Directions

  • Drain tuna oil/water.
  • Crush tuna in a mixing bowl. Add all other ingredients except oil, mix gently.
  • Heat oil in a frying pan, spoon about 2 Tbsp mixture into oil and pan fry until golden.
  • Turn and cook for a few minutes longer.
  • Once golden brown in both sides, put in a cooling rack or paper towels to remove excess oil.

Notes

  • Enjoy with your favorite dipping sauce.
