Fresh Christmas Salad combines baby arugula, romaine, radicchio, fennel, apples, and goat cheese for a festive blend of flavors and textures. Tossed in a bright vinaigrette of orange juice, zest, honey, olive oil, and champagne vinegar, it's a delightful holiday dish.

Ingredients

  • For the Salad
  • 2 cups baby arugula

  • 2 cups chiffonade romaine lettuce

  • 1 cup chiffonade radicchio

  • 1 small fennel bulb, sliced thinly

  • 1 cup thinly sliced apples

  • 1/4 cup goat cheese

  • For the Vinaigrette
  • 1/4 cup fresh orange juice

  • 1 Tbsp orange zest

  • 1 Tbsp honey

  • 1/2 cup extra-virgin olive oil

  • 1 Tbsp champagne vinegar

  • Salt and pepper to taste

Directions

  • Combine all the ingredients for the vinaigrette in a small bowl and whisk to incorporate. Set aside.
  • Combine the arugula, lettuce, radicchio, fennel, and apples in a bowl. Toss with the vinaigrette.
  • Garnish with goat cheese and serve immediately.
