Ingredients

  • 1/2 Lb. Scallops

  • 2 large eggs, lightly beaten

  • 1/2 cup all-purpose flour

  • 3 scallions, white and green parts, thinly sliced

  • 1 finely small diced Yellow Peruvian pepper

  • 1/4 cup minced fresh parsley

  • 1/2 tsp. kosher salt

  • 1/4 tsp. ground fresh pepper

Directions

  • In a large saucepan, heat 2 inches of oil to 350°.
  • Meanwhile, in a medium bowl, whisk the flour, salt and pepper.
  • Add the eggs, fold parsley, scallions, and yellow Peruvian pepper.
  • Working in batches, drop heaping tsps of the batter into the oil and fry, turning occasionally, until golden brown all over, about 2 minutes per side.
  • Using a slotted spoon, transfer the fritters to paper towels.
  • Serve with lemon wedges.
