Ingredients

  • 1 cup red onion, small diced

  • 1 Lb. sliced 1’ thick Andouille Sausages (or your preference)

  • 3 Tbsp olive oil

  • 2 Tbsp paste or minced garlic

  • 2 Tbsp tomato paste

  • 1 tsp smoked paprika

  • 1/2 tsp ground cumin

  • 1/2 tsp dried oregano

  • 2 cups raw basmati rice

  • 2 - 15.5 oz. each can cooked garbanzo beans

  • 3 cups unsalted chicken broth

  • Salt and pepper to taste

  • 1 handful minced fresh parsley

Directions

  • Heat oil in medium saucepan over medium-high heat.
  • Add sausage; cook, flipping occasionally until golden brown on both sides, about 3 minutes.
  • Add onion, garlic; cook, stirring occasionally, until onion is soft and translucent, about 5 minutes.
  • Add paprika, cumin, rice, tomato paste, drained garbanzos, and stirring, for under 1 minute. Add broth and season with salt and pepper. Bring to a full boil. Then reduce to low. Cook covered for 20 minutes, until rice is cooked.
  • After 20 minutes, do not remove the lid yet, turn off the stove, and let it sit for 10 minutes.
  • Fluff with a fork and add half the parsley to combine.
  • Sprinkle with parsley and a drizzle of olive oil to serve.
