Ingredients

  • 1 Lb. ground beef (I use 90% lean)

  • 1 Lb. ground pork

  • 3/4 cup uncooked quick oats

  • 1 cup small diced caramelized yellow onion

  • 1 Tbsp Worcestershire sauce

  • 2 tsps salt

  • 2 tsps minced garlic

  • 1 Tbsp dried oregano

  • 1/4 cup finely chopped fresh parsley

  • 1 tsp ground black pepper

  • 1/2 cup milk

  • 2 eggs, slightly beaten

  • 1/4 cup ketchup

  • 3 Tbsp yellow mustard

  • 1 tsp cumin

  • 1/2 cup packed grated parmesan cheese

Directions

  • Preheat oven to 350 degrees F.
  • Gently combine all ingredients in a large bowl. Transfer to a greased loaf pan.
  • Bake (uncovered) for about 60 minutes, or until meatloaf reaches an internal temperature of 160°F and juices run clear.
  • Let stand 30 minutes before slicing it.
