Scrambled Salchicha Huachana

  • 5 Eggs
  • ½ tsp. salt
  • ¼ tsp. ground black pepper
  • 1 tsp. chili flakes
  • 1Lb Huacho Sausage
  • 2 TBSP whipped cream or whole milk
  • Crunchy bread such as baguette, or ciabatta

  1. Mix eggs with salt, pepper and chili flakes.
  2. Pour ½ cup water in a large sauté pan and add the sausage without the case.
  3. Break the sausage with the help of a spoon and let cook until the water evaporates completely.
  4. Add beaten eggs into the sausage and mix until cook.
  5. To finish turn off the heat and incorporate cream.

Note: Serve with crunchy bread and a good cup of coffee!
