Peruvian Stuffing


  • 1/8 Cup pitted prunes, roughly chopped
  • ¼ Cup raisins, roughly chopped
  • 1/4Cup fresh apple , roughly chopped
  • 1/4Cup fresh ripe pears, roughly chopped
  • ½ Cup diced yellow onions
  • ½ Cup nuts, chopped (almonds, hazelnuts, pecans, walnuts, chestnuts or a combination of these)
  • 2 pork sausages, casings removed and chopped
  • 4 Cloves garlic, minced
  • 3 Cups cooked rice
  • *Salt and pepper, to taste



  1. In a sauté pan, heat up a couple of tablespoons of vegetable oil and sweat the onions and garlic until translucent.
  2. Add the sausage and cook until it is cooked.
  3. Add the fruit, nuts and rice and cook until the fruit begins to soften.
