Lime-Blueberries Bundt Cake


3/4 cup unsalted butter room temp

2 1/4 cups flour plus more for dusting the Bundt pan

3/4 tsp baking soda

3/4 tsp salt

1 cup sugar

4 eggs

1 1/2 cups milk

3 tbsp lime zest

1/2 cup lime juice

1 1/2 cups blueberries (preferable frozen)

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Prepare your Bundt pan with butter and dusting flour on top of it. Tap out the excess flour and set aside.
  3. Whisk together the flour, salt, and baking soda in a bowl.
  4. On medium to high speed beat butter and sugar until light and fluffy –about 4 to 6 minutes
  5. On low speed, add the flour mixture and milk alternately until completely combined.
  6. Using a spatula, add in the lime juice and zest until combined.
  7. Dust blueberries with flour, about 1 tablespoon and fold them in.
  8. Spoon the batter into the prepared Bundt pan and bake until a toothpick or cake tester inserted in center comes out clean (60-65 minutes).
  9. Remove from the oven and cool for 10 minutes in the pan.
  10. Unmold and dust with powder sugar previous to serve.
