Lentils Peruvian Style

Ingredients:

  • ½ Lb. Green Lentils
  • 1 small diced red onion
  • 3 Tbsp. garlic paste
  • 1 cup tomato sauce
  • 2 Tbsp. vegetable oil
  • 1 Lb. Italian Sausages cut 1’
  • 1 Tbsp. Dry oregano
  • 1 tsp. ground cumin
  • 1 dried bay leave
  • 3 Tbsp. extra virgin olive oil
  • Salt and pepper

Description

Preparation:

  1. Soak the lentils for about 1 hour.
  2. Preheat a pot. Fry the sausages until golden brown.
  3. Add the onion and sauté until it is soft and translucent. About 7 minutes.
  4. Add the garlic and cook for about one minute.
  5. Incorporate tomato sauce, garlic, cumin, and oregano.
  6. Add the drained raw lentils to the sauté with 3 cups of water, and boil for 30 minutes.
  7. When the lentils turn soft and tender, verify salt. At the end add a drizzle of extra virgin olive oil.

Note: *You can use this recipe of lentils as a side dish or enjoy them by itself.
