Huacatay Sauce – Salsa Huacatay

I would like to share one of my personal favorite recipes that is a staple in my kitchen. Huacatay Sauce is one of the most popular sauces in Peru. Like Huacaina you can enjoy this creamy sauce on Fried Yucas, Potatoes, or Peruvian corn.

Start off by sautéing 1/4 of a large red onion in corn oil
Cut off the stems and slice in half 2 Peruvian hot yellow peppers. Keep the seeds depending if you like the spice or remove if you don’t wish to have the added heat. Sauté and incorporate 2 to 3 cloves of garlic depending on taste preference.
Add the mixture to your blender or food processor.
Add a handful of toasted peanuts
Add 5 oz. of Queso Fresco cheese (found at most local Latin markets)
Begin with adding 1/4c of Evaporated Milk, adding until you have reached your desired consistency. I like to use 3/4c of milk for a thinner texture.

*Note: I always add salt last. The cheese and peanuts are already salty by nature so sometimes the added tbsp. of salt isn’t needed.
