Deviled Eggs

  • 6 hardboiled eggs*
  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • Freshly ground black pepper
  • Garnish: Smoked Spanish paprika, chives, bacon

  1. Slice the eggs in half lengthwise, removing yolks to a medium bowl, and placing the whites on a serving platter.
  2. Mash the yolks into a fine crumble using a fork or use a food processor for a smooth texture.
  3. Add mayonnaise, mustard, salt, and pepper, and mix well.
  4. Use a spoon to add a portion of the yolk mixture back into the hole of each egg white.
  5. Sprinkle on paprika, chives or bacon for garnish.
