Banana Maple Muffins

Ingredients:

  • 1/3 cup butter (melted)
  • ¼ – ½ cup brown sugar
  • 1 egg
  • 2 teaspoons vanilla
  • 2 ½ tablespoon maple syrup
  • 3 bananas (ripe and mashed)
  • ½ cup chopped pecans
  • 1 cup flour
  • ½ teaspoon baking powder
  • 1/8 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg

Description

Instructions:

  1. Preheat oven to 350 F degrees.
  2. Prepare your muffin tin with paper or silicone cups. Set aside.
  3. In a mixing bowl combine the melted butter, brown sugar, egg, vanilla, maple syrup, bananas, and pecans.
  4. Then add in the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Stir until combined. The batter will be thick.
  5. Spoon it evenly into the prepared muffin tin.
  6. Bake for about 23 minutes or until a toothpick inserted comes out clean. Cool completely.

Note: If you like your muffins very sweet go for the half cup of sugar, otherwise a quarter will work great.
