Artichoke Fritters

Yield: 16 pieces

Ingredients:

  • 4 artichoke hearts
  • 2/3 cup flour
  • ¼ cup corn starch
  • 1 tsp. salt
  • ½ tsp. black ground pepper
  • 2 eggs
  • 1 Tbsp. milk
  • Vegetable oil for frying
  • 1 lemon

Description

Directions:

  1. Cut artichokes into four wedges. Drain well and pat dry with paper towel.
  2. In a bowl whisk flour, salt, and eggs, gradually pour in milk and whisk until smooth.
  3. Add artichoke wedges into the batter and toss to coat.
  4. Fry in hot oil for 3-4 minutes or until golden.
  5. Garnish with lemon wedges
