“Fricase” de Pollo

chicken fricase

  • 1 small red onion
  • 1 tomatoe
  • 4 or 6 pieces of chicken (whatever you like the best)
  • 2 Tbsp. Corn oil
  • 2 Tbsp. Garlic paste
  • 2 Tbsp. Peruvian Aji Amarillo
  • 1 Tea Spoon ground cumin
  • Salt and pepper
  • 1 cup of water
  • 1 full hand chopped parsley
  • 1 egg

 

  1. Heat the oil in a sauce pan and fried the chicken. Place the chicken in a bowl.
  2. Add the onion, and saute until the onion is translucent, about 5 minutes.
  3. Add the tomatoe chopped in little cubes, the Peruvian aji, garlic, cumin. Season with salt and pepper, to taste. Stir and add the chicken.
  4. Add water to boil and add the parseley, then the beaten egg on top. Stir and turn off.
  5. You can serve this dish with a portion of white rice, or potatoes.
  6. Enjoy!
